My accomplishments today:
15 minute yoga before meditation.
I made Chicken Pho (homemade broth!) and Summer Rolls.
Vacuumed my lady's apartment (the elderly lady I help 4 hours a week).
Walked with Chief for a half hour.
And I sweat all the way through!
My eating was moderate today, except I might have had an extra handful of peanuts.
Otherwise a decent day. Somewhat relaxing. Cooking relaxes me.
Here's the Chicken Pho recipe. I used less chicken for the stock (just the back and neck of one bird) and it still came out good.
Next Kale Chips!
Can I count cooking in a hot kitchen as part of my workout? :)
I say, most definitely! I love chicken's neck...kinda like fish cheeks...so tender!
